How to Make Toast Bread in a Bread Maker?
You know, like all Germans I LOVE bread and I was curious if a bread maker can live up to my family’s bread standards. So far, I baked about 5 or 6 different bread loaves and a cake with the Michelangelo bread maker machine to give you my honest opinion about it.
I will show you in the video below how the bread machine that I have works and how a simple white loaf turns out so you can see the results for yourself.

The machine came with a manual that also contains recipes. A measuring cup and a measuring spoon, a little tool in case your kneading attachment will stick in the dough, a baking pan and the kneading hook. I´ve never needed to use the little tool as the bread always released from the pan and hook very easy with no problems.
Making the bread is super simple, you basically just place the kneading attachment into the pan and then dump all ingredients into the baking pan and start the program of your choice. I did not like the recipes in the booklet that came with the machine, so I developed a great recipe for a simple loaf that is perfect for toast and sandwiches and I will link it for you in the description. You can use the recipe too, if you want to make it in a usual bread pan.
To be honest, when I tried the machine for the first time, I was not very hopeful that the bread would turn out very well. I just couldn’t imagine that the little hook could knead the dough perfectly. But oh boy, I was pleasantly surprised.
The settings are straight forward. You can choose your favorite program, plus the size of the loaf and if you want to light, medium or dark crust.
After starting the machine, you can just walk away. The machine starts with stirring the dough together.
Then it rests for a moment and will start kneading. I was surprised how well the machine kneads the dough, it picks up all the flour on the edges and the dough has a nice tension.
After kneading the machine warms up a bit and allows the dough to rise.
During the whole process you can see in the display at which stage the bread making process is.
After the bread is baked it gives you a signal and you can remove it. Additionally, it has a warm holding function in case you are at work and want to come home to freshly made bread. I personally don´t really like that as it leaves the bread a little bit soggy on the lower part as the steam is trapped in the container.
That´s why I prefer to remove the bread right after the baking time and allow it to cool down on a cooling rack.
A little twist removes the container from the machine and the bread releases very easy.
What I love is that it slices beautifully, the crumb is perfect, and it tastes soooo good. I will never buy packaged bread again. The homemade toast bread is so easy to make and I can control the ingredients.

This homemade toast breast recipe is made for a bread machine but you can also bake it in a bread pan.
All all ingredients to the baking pan of your bread machine and start the program for a simple loaf and bake according your bread machine´s instructions.
Without Bread Machine
Add all ingredients to the bowl of your stand mixer.
Knead for about 10-12 min. with a kneading hook.
Shape to a loaf and place onto a with parchment paper lined baking sheet or into a bread pan.
Let raise for about 50 min. in a warm place.
Bake in a 400F pre-heated oven for about 35-45 min.

I used the following settings in the bread maker machine: medium crust colour and large sized loaf.
In Germany toast bread is a special kind of white bread especially made to toast in the toaster. It is also used for dishes like club sandwhiches and toast Hawaii.
You can also add herbs and seasonings such as garlic, rosemary, dill, chopped onion, jalapeño, shredded cheese, chopped nuts, dried cranberries, etc. My no yeast bread is the quick bread alternative here—you can add flavors to that loaf, too! Baker's Tip: Avoid adding too much flour to the dough as you work with it.
If the area is too warm, bread will rise too fast and begin cooking before the yeast has finished acting. This will impart a "yeasty" taste to the dough that will be transferred to the finished baked loaf. Using old ingredients (rancid nuts, "old" shortening) will cause yeast breads to taste old or have an "off" taste.
Your bland bread could be the result of rushing the process. Try a slow overnight rise in the refrigerator. Plan ahead to proof your loaf overnight. This hands-off time in the icebox will slow the fermentation process in your dough and result in a complex-flavored loaf.
Toastbrot (Toast Bread), in the eyes of most Germans, is not really bread at all. It might seem odd that Germans make such a distinction between bread and toast, but one trip to a German bakery quickly clears up the confusion.
Sweeteners such as malt and honey are used to add flavor to bread dough. Malt, which is available in powder and liquid form, can be added to almost any bread.
In order to use less yeast you're going to add time and/or warmth to the dough preparation process. Enriched doughs (those with lots of butter, eggs, milk, and/or sugar) can develop off flavors in a warmer environment, or in the time it takes for reduced amounts of yeast to grow and work at cool room temperature.
If your bread has a sour, yeasty flavour and smells of alcohol then you have either used too much yeast.or you may have use stale yeast or creamed fresh yeast with sugar.
Homemade bread contains no chemicals, artificial additives, preservatives, or enzymes. These are often used in store-bought bread to make them stay fresher for longer and enhance the taste.
It's tough to say what is causing the bread to be bland. Letting it sit overnight, usually helps in that department, but also an addition of salt. As you add salt though, you will probably want to add yeast as well, not much mind you, but a little extra of each could be beneficial.
This can affect the bread by adding a "yeasty" taste if you put too much into the dough. General amounts of yeast are around 1 - 2 % of the flour, by weight. Too much yeast could cause the dough to go flat by releasing gas before the flour is ready to expand.
Carbon dioxide is responsible for all the bubbles that make holes in bread, making it lighter and fluffier. Because gas is created as a result of yeast growth, the more the yeast grows, the more gas in the dough and the more light and airy your bread loaf will be.
Regarding bread, German cuisine is more varied than that of either Eastern or Western Europe. Most German breads are made with sourdough. Most breads contain both wheat and rye flour (hence Mischbrot, mixed bread), and often also wholemeal and whole seeds such as linseed, sunflower seed, or pumpkin seed (Vollkornbrot).

For seeds, and harder nuts like almonds, I definitely recommend soaking them in warm water for at least an hour (or 2 if you remember!)before adding them into your bread dough. Just like dried fruit, I soak them, strain them, then dimple them into the dough after the autolyse.
The volatile esters, aldehydes and secondary alcohols are the most significant flavor compounds produced during the dough fermentation by bakers yeast, are of particular interest in bread, because they contribute pleasant fruity and buttery flavor notes.
Another benefit is that homemade bread doesn't contain any chemicals or artificial additives. It's also generally lower in calories than store-bought bread. Plus, making your own bread is a great way to save money. You can buy quality ingredients for a fraction of the price of store-bought bread.
